Quick Dinners for nights with lots of activities

The fall has begun and so have activities.  Back are those nights when you are out of the house shuffling kids to activities from 4:30 - 7:00, you walk in the door at 7:10 and need to be sitting down eating by 7:15 so kids can get to bed by 8:15.  Yes, some of those nights will involve drive-thru runs.  Sometimes, it's just something you have to do.  I'm trying to compile a list of other alternatives that I can quickly reference that all (or at least most) of my kids will eat.
Sure, throwing together a quick salad or bowl of tuna fish would work for me - my boys, not so much.  Unfortunately, mine aren't big soup eaters, so my visions of warming up a bowl of hearty soup with some crusty bread will not work just yet.  They hate chili...(but I'm going to continue to work on getting them to like SOME variety of it.)   
The brainstorming begins...

California BLTs ( Bacon, Lettuce, Tomato, avocado on toasted bread)
The bacon can even be made ahead of time and refrigerated. We made these last night after soccer, and everyone happily ate them. While my boys didn't eat them with the tomato or avocado, they at least ate bacon lettuce sandwiches on toast with some carrot sticks on the side. I'll call that a win. 

Chicken Noodle Soup and oyster crackers 
Chicken noodle soup is one of the few soups all 3 of my kids will eat, so from a can or homemade, this will be a good, quick, hot meal for a late night. 

Paninis (grilled sandwiches)
- ham and cheese
- turkey, cheese, avocado,
- salami and cheese
- Everett fav - thinly sliced pork, provolone, pesto, and apple

Meatball subs
Premake (or buy) the meatballs. Warm meatballs in microwave. Toast a sliced baguette in the oven. Layer marinara sauce, meatballs and mozzarella cheese. Put back in oven to melt the cheese.

Pancakes/waffles/ breakfast night with fruit

Breakfast Biscuits
You can premake the biscuits and the bacon. Then quickly mix eggs, milk, salt & pepper together and pour a small amount (less than half an inch high) in a ramekin. Microwave the egg mixture in the ramekin - I think only about 30 seconds or so. Assemble the egg, bacon, cheese, on a biscuit.
Serve with fruit.
